Soft and moist Chocolate cake with ganache topping.

Ingredients for chocolate cake:

  • 175g Flour (1+ 1/2 cup)
  • 130g Sugar (3/4 cup)
  • ¼ tsp Salt
  • 125g melted Butter (1/2 cup)
  • 2-3 tsp Vanilla essence
  • 3 Eggs
  • 350ml liquid Milk (1 ½ cup)
  • 130g Cocoa powder (3/4 cup)
  • 1 ½ tsp of Baking powder
  • ½ tsp of Baking soda

Ingredients for chocolate ganache:

  • 1/2 lb or about 1 1/3 cup of semi-sweet chocolate chips or regular chocolate bar
  • 1 cup heavywhipping cream


Method for the Chocolate cake:

    • In a big bowl, sieve the flour, baking soda, baking powder and the cocoa powder for about 2-3 times or more, and set aside.
      Now the reason why I sieve the flour prior baking is for the fluffiness of the cake. The more you sieve, the fluffier the cake will be. Sifted flour, which is much lighter than unsifted flour, is easier to mix into other ingredients when forming a cake batter or making dough. When flour is sifted with other dry ingredients, such as cocoa powder, this helps to combine them evenly before they are mixed with other ingredients.
    • In another bowl, add the melted butter, sugar and vanilla essence and beat together until you obtain a creamy consistency.
    • Add the eggs one at a time and beat for 3-4 minutes, until you get a velvety texture.
    • Once the ingredients are well beaten, you can add a portion of the milk and beat for 2-3 seconds and then add a portion of the sieve flour mixture and continue beat for 2-3 minutes. Repeat this process until all ingredients are well combined.
    • Grease your baking tray and pour in the cake batter. Set the oven at 180° and bake for 20-25 minutes. Let the cake cool down, for decoration. AND ENJOY!


Method for the Chocolate ganache:

  • Bring heavy cream to a simmer on the stove top, stirring occasionally. As soon as the cream starts to simmer, remove from heat and put the chocolate chips into it, swirling the bowl to make sure all chips are all well covered.
  • Place a lid on the chocolate chips to preserve the heat and let cool down for 5 minutes. Remove the lid and swirl the chocolate chips with a whisk. It is important to keep the heat, as it will help with the process of the melting of the chocolate. At this point, start in the centre and work outward the ganache, until you obtain a smooth texture. Give it a few minutes, and it will turn into velvety ganache.


Below are some decoration ideas which you can come up with for the cake :

  • You can spread nutella and sprinkle icing sugar on top of the cake for a nice decoration, OR
  • You can spread some whipped cream (you can add flavours to it- chocolate,coffee or vanilla) and a cherry on top, OR
  • You can make a ganache or a frosting, and sprinkle some roasted hazelnuts on top OR
  • For a party/child friendly decoration, you can sprinkle some colourful sprinklers on top.
